Château Haut-Bailly 2011 风土之酒

2011 年份的酒彻底反应出了Haut Bailly的风土条件。经典的水果清香中却保有强劲而精细的单宁酒体,是一款极为细致,典型的Haut-Bailly风格酒

紧接著湿润多雨的秋天后,2010 年的冬天和 2011 年的春天非常乾燥。在欧洲,2011 年的春天是近 50 年来记录里最炎热也是最乾燥的,在 3 月到 6 月之间,相较于平均降雨量 298 毫米,仅仅只有 78 毫米降雨量。这种乾燥缺水的气候让开花和结果提前在五月开始。6 月 26 和 27 日有一波热浪来袭。而幸运的是,凉爽湿润的夏天平衡了这异常温热的春天,使得植物生长循环能重新开始。最后,炎热如夏季般的 9 月保证了葡萄完美的熟成。之後接踵而至的秋天也比往常还热。也就是这些气候的因素,让这次的葡萄收成能达到理想的成熟度。9 月初,多亏于部分葡萄藤的修剪,增加枝芽之间的空气对流,葡萄成熟的很完美,具有健全的香气浓度和良好的结构。9 月 9 日开始从年轻的梅洛开始摘收。整个葡萄收摘在乾燥的艳阳下持续了三周 — 最完美的气候状况。稍微偏低的赤霞珠产量刚好和稍微偏多的梅洛产量互相平衡。葡萄果实在葡萄园以及酒窖里经过严格筛选,利用一台全新的果梗分离机器精细并轻柔的将果梗从果实上分离出来。而酒精发酵的温度全程控制在 26 °C,以避免过度萃取。

A charming wine with nice density and depth, supple firm tannins and a fairly long finish. This is a classic Haut Bailly that is meant to age and evolve — right now the generous tannins overshadow the flavours lingering in the background. However the length and depth of flavours show it will evolve and age beautifully for a decade or more. 91-92分

While the elegant, stylish 2011 Haut-Bailly does not possess the density and concentration of the three vintages that preceded it, this is still outstanding wine as well as a tribute to the impeccable work done by proprietor Robert Wilmers and his manager, Veronique Sanders. Classic red and black currant aromas interspersed with notions of wet stones/crushed rocks, tobacco leaf and spice box are followed by a medium-bodied, well-balanced, impressively pure wine built on finesse and understatement. This beauty is capable of drinking well young or over the next 15+ years. 91-93
